Cranberry Muffins

Yesterday on Instagram, I commented that here in the Pacific Northwest, we don't typically get to enjoy snow, so we decorate with snowy things indoors, and practice a little hygge.  This weekend, our hygge has been all about muffins.  Yesterday, we made applesauce muffins, from one of my mom's very old, very worn recipe cards (you know the kind).  Those applesauce muffins are the first thing I ever baked, and I made them several times during my high school years.  I took the recipe with me when I went to college, only to discover I'd forgotten to write down how much flour to use, so I never made them.  I don't think I've made or eaten them since I was a teenager, so they were a real treat.  I forgot to take photos of them though, sadly.  Tomorrow I'll pull out the recipe anyway and share it with you, if you'd like.

Today, however, we wanted cranberries.  Our freezer is full of cranberries, as I stock up every winter so I can enjoy them all year long.  I don't know if they can be found all over the country, but at least here in Washington state they are prolific, as we have cranberry bogs along our coastline and we are home to Ocean Spray.  This was a Taste of Home recipe, which I am mixed about sometimes.  I love the old fashioned recipes you can find in Taste of Home, but I stopped getting the magazine years ago, as I felt the recipes involved too much salt, too much sugar, and too many cans of this and that.  I like food made of food.  That was years ago now, and recipes (cooking in general) I've noticed has changed a bit, as the demand for whole food cooking is rising, so I really need to revisit Taste of Home.

Anyway, I digress.  The point is, I found this recipe via Taste of Home, and it looked pretty good.  There's only a half a cup of sugar in the entire recipe, and lots of yummy cranberries.  It makes 12 muffins, or you can double it if you have lots of mouths to feed.  Or you just want to eat muffins all day, which is what I did when we made these.  They are not very sweet at all, so they're great with coffee or tea for a light breakfast.  The recipe calls for lemon zest, but orange zest would be good too.  I actually couldn't taste the zest at all, so I think it is more a flavor enhancer rather than adding actual lemon flavor.  You probably could just a teaspoon of vanilla if you don't have any fruit to zest.

The only thing I might change when we make them again is to add more cranberries.  I think the amount stated in the recipe is perfectly adequate, but we loooooove cranberries, so I think I'll try adding a half a cup more than what it calls for.

I will share one of my tips for great muffins.  A lot of people use a mixer when making quick breads, but in my opinion this is not only unnecessary and extra work, you run the risk of tough muffins because of over-mixing.  It is very very easy to overmix, most especially with a mixer.  Quick breads don't need a mixer.  Just grab a rubber spatula and fold/stir until the wet and dry ingredients are just blended.  It will take you far more time to get your mixer set up and cleaned up afterwards than it will for you to just stir the batter by hand.

CRANBERRY MUFFINS

1 cup (or more!) fresh cranberries, chopped a little bit

8 tablespoons sugar, divided

1-3/4 cups all-purpose flour

2-1/2 teaspoons baking powder

1/4 teaspoon salt

1 large egg

3/4 cup milk

1/3 cup vegetable oil

1 teaspoon grated lemon or orange zest, optional

Cinnamon sugar (for sprinkling on top)

Directions:

  1. Stir 2 Tb of sugar into the cranberries, and set aside.
  2. Mix dry ingredients
  3. Mix wet ingredients
  4. Add wet ingredients into dry ingredients, and stir by hand just until moistened. Fold in berries and zest.
  5. Fill 12 lightly greased standard muffin cups. Sprinkle lightly with cinnamon sugar.
  6. Bake at 400° for 18, or until tester comes out clean, and muffins are starting to brown and pull away from the sides of the pan.

Let cool for about 10 minutes in the pan, then remove and set on a rack to cool completely. Alternatively, you can be impatient and stuff your face while they’re piping hot like we did.  Makes 12 muffins.

Snowflake Arrow Replacement - This snowflake has been around for a while, but with aaaaallllll the Christmas choices, this has always been the most popular.  It is simple, pretty, elegant, goes with just about any decorating style, and it can stay up past Christmas until the late winter holidays begin.

Pineapple Arrow Replacement - I know, I know, this one isn't a fall or Christmas design.  I am including it in this announcement however, because it has been super popular this year.  Every time it becomes available, it is oversold (and in fact a few of you have been waiting patiently for yours - yay, it will be here soon!).  If you've had your eye on a pineapple, now is your moment!

A quick note on shipping - it's a little tricky with these.  The arrows are oversized, and most of them are quite heavy.  Shipping cost is based on box dimensions, weight, and how far away it is shipping from us here in western Washington state.  Shipping is set based on the purchase of a single arrow, so if you purchase multiple arrows, you'll probably see a refund of the shipping difference after we pack and ship your box, especially if you live closer to where we are.  We do refund shipping overages on these arrows.

Winter’s Light Series - Hand-Poured Soy Candles (Cloved Cranberry)

Continuing with our Winter’s Light Series (read about it here), today I am introducing our next Soy Candle fragrance….Cloved Cranberry!

Cloved Cranberry combines the crisp, fruity scent of ripe red cranberries with the warmth and spice of cloves, and a sprinkling of sweet sparkling sugar!  Wonderful for Christmas, of course (this was our best seller in December), but it doesn’t scream “holiday.”  Cloved Cranberry is a nice winter fragrance (our best-selling last month), having the warmth of spice, yet cool and fruity. 

If you didn’t catch the earlier post explaining all about our hand-poured soy candles, here is a recap:

We have been making these for quite a few years now, hand-pouring them in beautiful Union, WA on Hood Canal.  We use 100% soy wax, not a wax blend.  Why soy?  Oh so many reasons.  First off, it makes a wonderful candle.  The wax burns at a lower temperature, so you get a longer burn time with soy over paraffin.  It will also withstand a heavier load of fragrance oil, so they are very highly scented.  We’ve had a single votive candle sitting in our car as an air freshener for going on 5 years now, and it still smells wonderful!  Soy is grown right here in America, so by choosing soy you are supporting American farmers, not to mention using a renewable resource, as paraffin is a petroleum product and not renewable.  If that isn’t enough, you can remove any leftover wax residue in your candles cups with soap and water!  What’s not to love here?

Currently, we are pouring standard-size votives, tealights, and an 8 ounce jar.  We do not use dyes in our wax, so the naturally creamy white color of the wax won’t compete with whatever your decorating palette you may have.  The votives fit in a standard-sized votive cup and will burn 10-15+ hours depending on how long it burns each time you light it (seems to burn longer overall if you keep it lit for a long time).  Tealights come in a clear plastic candle cup which can be placed out by themselves, or within larger hurricane candle holders or jars.  One tiny tealight will scent a whole room, and burn for about 6 hours!

Our jar candles have a classy, vintage-style look with their amber glass and black lids, reminiscent of antique apothecary containers.  Again, total burn time depends on how you light it, but our test candles burn for at least 70 hours (our tests burn on average 75-80 hours, but we say 70 to play it safe!).  Once you’ve burned the candle, the glass jar and lid are reusable for home storage!  Use for craft storage, cotton balls, herbs, vitamins, oil blends or creams, flavored sauces, bath salts, notions – whatever!  If you don’t want to reuse the jar, then please recycle. :)

Winter’s Light Series - Hand-Poured Soy Candles (Cinnabun)

For us, the beginning of January always starts with some serious nesting - finding homes for our received gifts, tossing out accumulated clutter in the frantic moments of December, cleaning and airing out the house after holiday travels, and trying to enjoy the outdoors and fresh air as much as possible without freezing our noses off.  We try to tuck in as much light here and there to ward January blues, as we’re cozied up inside during the shortest, darkest days of the year.  Candles, little lamps, specialty light bulbs and LED lights are among our top selling items in January/February, so I thought it would be fun to do a blog series to highlight some of our favorites. 

This week I’ll talk about our best-selling soy candles, made right here in western Washington, and introduce once scent each day.

Today’s fragrance is Cinnabun, our top-selling year-round fragrance.  Each season has its best-seller, but it is Cinnabun that is a consistent favorite all throughout the year.  The classic spicy warmth of cinnamon and cloves are sweetened up a bit with some vanilla and brown sugar.  Light this one up and folks will be sure that gooey cinnamon buns are baking in your oven!

Last Shipping Day 2014

Last Day of Shipping at The Weed Patch for 2014

 

If you've been reading our blog at all, you probably caught that we closed our physical storefront in order to spend more time with the kids during the Christmas (and other holiday) season. We're so excited to actually be able to dedicate some time to family, and friends, over the Christmas season. 
 
Our final day of shipping before Christmas will be Sunday December 21st, 2014.   
 
Our shipping department will be closed the week of Christmas to allow us time with our family.  We will have limited phone hours during this time.
 
Shipping will resume Monday December 29th, with limited phone support hours during the week of the New Years holiday.
 
Please anticipate a delay in shipping during the Holidays.
 
Feel free to place your orders - if the items are in stock and not special order, we'll be doing our best to get them out as fast as possible! Special order items will be ordered and shipped as soon as we receive them.
