So, we got this playground...

When we moved last year, one of the blessings of our new home was a fenced in back yard. Our previous home was fantastic (I still miss my 600sq ft of veggie garden, and the start of the orchard we had planted...), but the yard was a bit of a nightmare - it wasn't fenced in, and it was a corner lot - which meant that on two sides it was epically dangerous for the kids. So, when we moved, and realized "we can just let the kids play out back all day long!", we (meaning Chris, primarily) got a bug in our bonnet to get the kids a playset. Of course, not just ANY playset - Chris figured we could build an awesome playset for a fraction of the cost of purchasing one. We even managed to get two slides and four playground grade swings for free from a garage sale! Come spring, Chris caught the bug again (probably being cooped up inside with two energetic kids helped push that along), and started scouring the local craigsist for options.

Lo and Behold, we managed to find a HUGE playset that a local church with a daycare was selling, as they were upgrading. The set was massive - three 12 foot tall towers, two slides, a crawl tube, a bridge, and a picnic table. The price the daycare was asking was spectacular, and so we all piled into the car and drove the hour to check it out - and Ben fell in love. Which pretty much made it a done deal.

SO, Chris called up some friends, rented a 24' foot truck (we were optimistically hoping we could pull the thing apart in sections and keep it mostly together; SO could have happened, if everybody involved was either The Hulk or on the Olympic Weight Lifting Team - and we had more of us), and headed down on what turned out to be a rainy Saturday. Several hours later, and soaking wet, we piled back in to bring it back up to the house.

Long story short - with much back breaking labor, the help of Janene and our amazing cousin (Andrew Rash, we're talking about you, dude), Chris managed to get this thing up and put together. Ben was GIDDY, which made the sore muscles worth it (mostly).

So far, we've had one birthday party here and on it. Other than that, it has "simply" been used for hundreds of hours of fun - wild and crazy, and quiet too! We put the kiddie pool at the bottom of the big slide while it was hot - which WE thought would be awesome. We're not actually sure the kids ever went down the slide into it, but they sure had fun putting other things down the slide and into it...

Capital Earth Rugs Braided Jute Round Rugs - New Arrivals!

We just got these awesome new rugs into the shop, and we just had to get them online for you to check out! These rugs are all jute, which considered to be a sustainable, environmentally friendly material (it's a natural fiber). These braided rugs are water repellant, safe to have near a fireplace, and are spot clean (soap and water, or dry clean).

Friendship Pasta

I’m not really good with naming things, so when Chris asked me to write out this recipe, I went with the first thing I could think of. All the delicious vegetables we used were given to us by friends, and eating them in this dinner make me think of the nice times we had with them, thus the name Friendship Pasta. Kinda dorky, I know, but there you go.

I made this up as I went along, so I’m sorry that my directions and ingredients aren’t very exact. Every time I ask my mom how she cooks something, she says you just do it until it looks right, which always frustrated me as a notice cook. How do I know it looks right if I’ve never done it? This recipe is kind of like that, and I apologize, but if you are using really good fresh ingredients, they will speak for themselves, and you can’t really mess them up.

Here’s what you need:

  • Veggies from wonderful friends or a farmer’s market – I used maybe 4 cups worth of cut up veggies - a mixture of sliced young spring onions, baby patty pan squashed cut in half, an orange bell pepper cut to 1 inch pieces, and a handful of halved grape tomatoes.
  • Pasta – anything that looks good, like tubes, cork screws, or even fettuccini would work. I used three big handfuls of dried Fusilli pasta (really skinny curled tubes)
  • Herbs – most preferably fresh, but dried will do in a pinch. Just pick one flavor that sounds good to you – basil or thyme are good.
  • Fresh garlic, 4-5 cloves, minced
  • Olive oil, 1 tb or so
  • Balsamic vinegar, 1 tsp
  • Honey, ½ tsp
  • Whole milk, cream, or half/half – about a cup
  • Salt & freshly ground pepper
  • Cream Cheese – about 2 ounces (1/4 of a regular sized block)
  • Flour – about 1 tb
  • Parmesan – about ½ cup, plus more for garnish. Be sure you have the good stuff here. It is worth the $$, and will keep forever in the fridge if loosely wrapped and put in the cheese drawer
  • Fresh lemon juice and/or zest (optional)

 

This is vegetarian pasta, but if you prefer something with meat, you can serve this alongside some grilled pork or chicken, or you could roast chunks of a good quality sausage in with the veggies.

Here’s what you do:

  1. Cut up your veggies into fairly large pieces. Soft things that will take less time to cook should be larger, and firm things that take longer to cook should be cut smaller. Place in a shallow roasting pan, drizzle on the olive oil, balsamic vinegar (or any other kind of vinegar), and the honey. Sprinkle on some salt and freshly ground pepper, about 3 minced garlic cloves, then the dried herbs to taste, or just lay in full pieces of fresh herbs. Stir if all up and roast in the oven at 350 for a half hour, stirring once halfway through.
  2. Meanwhile, cook the pasta in boiling water according to the directions on the package. Drain, but reserve about 2 cups of the cooking liquid. Set pasta aside.
  3. Place the reserved water with the milk or cream in a medium saucepan over medium heat. Stir in the flour, bring to a boil, and stir constantly for about 2 minutes, or until it starts to thicken. Stir in the garlic, cheeses, salt, and pepper, all to taste, cooking for about another 2 minutes. I added just a little bit of fresh lemon at this point for some zing, but it would have tasted just fine without it.
  4. Place the pasta in a large serving bowl, like a shallow wide pasta bowl. Toss with about half the sauce. Top with the roasted veggies, then drizzle with the remaining sauce. Top with some extra shredded parmesan and minced herbs.
This would have easily fed four of us. For an extra treat, slice up some garlic bread, and dip it in the garlicy, herby olive left in the veggie roasting pan. Yum!

Introducing Hoot-N-Hollar by Lori Mitchell!

This year, one of the many new pieces that artist Lori Mitchell has created (produced by ESC & Company) is called "Hoot-N-Hollar". It is a sweet little boy dressed up as a fall owl! The colors are wonderful, and the details are - as always - fantastic. He's holding a pumpkin pail for trick-or-treating. His costume includes "owl feet" stockings, a multi-layered "feather" outfit, and a hood that has owl features.

Ladies Night Out August 2013 at Country Village Bothell Shops!

The second Thursday of each month is Ladies Night Out, and this coming Thursday is no exception.

Bothell Blues Festival 2013 at Country Village Shops!

The Bothell Blues Festival is entering it's third year, and each year has built upon the enormous success of the previous years - this year should be no different! Once again sponsored by Carolina Smoke BBQ Restaurant here in Country Village, this event boats an all-start lineup of Blues talent, a beer garden, some great vendors, and an all around fantastic time!

This year, the fun happens on August 31, 2013 - from 11am until 8pm.

The current band lineup includes: The Wired Band, The Chester Dennis Jones Band, The Stacy Jones Band, Palmer Junction and Eric Freeman.
